Parsley is widely used around the globe to season meats, soups, stews and potato dishes. Parsley can be used as a garnish or as a palette cleanser because of its natural fresh flavor.
MEDICINAL AND NUTRITIONAL BENEFITS
Parsley is rich in many vital vitamins, including Vitamin C, B 12, K and A. This means parsley keeps your immune system strong, tones your bones and heals the nervous system, too. Regular use of parsley can help control your blood pressure. The folic acid in this herb is like a tonic for your heart. It helps flush out excess fluid from the body, thus supporting kidney function.
Parsley essential oil, when massaged into the scalp, may reduce hair loss.
Eating parsley can reduce the risk of cancers such as breast, digestive tract, skin and prostate. Parsley contains high levels of a flavonoid called apigenin. Not only does apigenin possesses remarkable anti-cancer properties, it’s also a powerful anti-inflammatory and antioxidant. In fact, scientists have billed it a ‘chemoprotective’ food.
Use parsley daily, and you’ll feel relief from joint pain as Parsley helps to reduce the pain and swelling associated with arthritis. Parsley contains a volatile oil called eugenol that has been shown in studies to have strong anti-inflammatory as well as anti-arthritic properties and can significantly suppress swelling in the joint. Parsley tea relaxes stiff muscles and encourages digestion.
CULINARY USES
Parsley is great as an ingredient in many dishes. Here are some of the ways cooks use parsley: soup or stew, tomato sauce, pasta, pesto sauce, green salad, grain salad, seafood, potatoes, rice, poultry, beef, lamb, eggplant, and cheese dishes.
Combine chopped parsley with bulgur wheat, chopped green onions (scallions), mint leaves, lemon juice and olive oil to make the Middle Eastern classic dish, tabouli.
Add parsley to pesto sauce to add more texture to its green color.
Combine chopped parsley, garlic and lemon zest, and use it as a rub for chicken, lamb and beef.
Chopped parsley can be sprinkled on a host of different recipes, including salads, vegetable sautés and grilled fish.
TIPS TO KEEP YOUR PARSLEY HAPPY
